JÜRGEN AND MARLIES HIRSCHBÜHL DEVOTE THEIR LIVES TO THEIR ANIMALS, FIELDS AND TO RUNNING A TRADITIONAL RESTAURANT AS THE FOURTH GENERATIONS IN KRUMBACH, BREGENZERWALD. THEY BREED THEIR OWN DEXTER-COWS, DUROC-PIGS AND MERINO-LAMBS, WHICH ARE ALL SERVED TO THEIR GUESTS AT THE RESTAURANT.

IT IS CRUCIAL TO THE HIRSCHBÜHL´S THAT THE ANIMALS HAVE A GREAT STANDARD OF LIFE. FROM THE DAY THAT THEY ARE BORN, THE ANIMALS RECEIVE THE HIGHEST QUALITY CARE, THROUGH WHICH A STRONG BOND AND CONNECTION IS FORMED BETWEEN THE COUPLE AND THE ANIMALS. HENCE IT‘S ONLY NATURAL THAT FOR JÜRGEN AND MARLIES IT IS MOST UNACCEPTABLE FOR THE ANIMALS TO UNNECESSARILY SUFFER.
LIKE ON THE WAY TO THE SLAUGHTERHOUSE. JÜRGEN IS AN ADVOCATE FOR THE „SHOT ON THE FIELD“, MEANING AN ANIMAL GETS SHOT IN ITS FAMILIAR SURROUNDINGS, WHERE IT WAS BREED, FEED AND CONTENT. THIS HAS THE ADVANTAGE, THAT IT IS UNNECESSARY TO EXPOSE THE ANIMALS TO THE STRESS OF A TRANSPORT, RELEASING ADRENALIN OR TO UNDERGO FEAR, INDUCED BY UNKNOWN SURROUNDINGS, WHERE THEY THEN ARE RENDERED UNCONSCIOUS AND BLEED TO DEATH. WITH THE “SHOT ON THE FIELD“, THE ANIMALS LEAD A NORMAL LIVE UNTIL THE END. NOT ONLY DOES THIS INCREASE THE QUALITY OF THE MEAT IMMENSELY BUT IT IS ALSO MUCH MORE HUMANE AND ETHICAL. UNFORTUNATELY THIS METHOD IS STILL CONTROVERSIAL BECAUSE OF REGULATIONS. BUT EVEN VEGANS AND VEGETARIANS, WHO REFRAIN FROM EATING MEAT OUT OF CONVICTION, COME TO THE „GASTHOF ADLER“ TO EAT MEAT, BECAUSE ITS PRODUCTION IS SO ETHICAL.
